Simple, easy, delicious bruschetta. Made with cherry tomatoes makes it even sweeter. I can’t wait to make this with fresh tomatoes from my garden!
Ingredients:
- 2 cups cherry tomatoes, quartered
- 1/2 cup chopped basil
- 1/4 cup finely sliced onion, yellow or red
- 2 garlic cloves, diced
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- a dash of salt and pepper
Time: 10 minutes
Servings: 4
Instructions
Put all ingredients together and toss.
Serve with pita chips, salami, pepperoni, over lettuce, or with mozzarella fresca.
