Chicken and Rice

This is the simplest thing I know how to make! It takes a little time but you literally throw it together and let it cook. This is a great comfort food meal for a rainy day. Normally I play with my food all the time; add this, a dash of that, etc. Not this one! This is mom’s recipe! It’s perfect just the way it is!

Ingredients:

  • 3 big chicken breasts

  • 1 1/2 cup of uncooked rice (I use jasmine, but whatever you prefer)
  • 2 cans of cream of chicken soup
  • 1 packet Lipton’s dry onion soup mix

 

Instructions

Preheat the oven to 350 degrees.

Rinse and drain rice.

Whisk the 2 cans cream of chicken and 2 cans of water in a mixing bowl.

Pour the mixture and rice into a 9×13 pan.

Lay the chicken on top of the rice and sauce mixture.

Sprinkle the whole onion soup packet over the chicken and sauce

Cover the pan with tin foil

Bake for 1 1/2 hours.

Voila! Easy peasy
